Grandma's Buttermilk Pancakes

Wonderful, light, fluffy and DELICIOUS pancakes
Leftovers can be wrapped in plastic and frozen. Microwave to use.

Preparation Time: 10 minutes
Start to Finish Time: 25 minutes
2 cups sifted flour
1 teaspoon baking soda
1 teaspoon salt
2 tablespoons sugar
2 eggs, lightly beaten
2 cups buttermilk
2 tablespoons melted butter

Sift dry ingredients into bowl. Add eggs, buttermilk and melted butter.
Stir only until flour is moistened (A few lumps are OK!)

Pre-heat griddle. Lightly grease it by using a piece of bacon.
- Use a 1/4 cup measuring cup and "spoon" batter onto pre-heated griddle.
Cook until edges bubble and golden brown. Flip to other side.
Serving Ideas: Serve with maple syrup or the topping of your choice.
Yield: 16 pancakes
